Soups.

CREAM OF POTATO SOUP

3 cups potatoes, cubed
1 cup skim milk
1 Teasp onion salt
1 cup stock
1 cup cream

Simmer potatoes, onion salt in stock, Puree and place all ingredients in stock pot, except cream, simmer 5 mins. Add cream and serve.

ZUCCHINI SOUP

1 large onion, chopped
5 vegetarian stock cubes, chicken
1 kg zucchini, sliced
1/2 -1 cup cream

Fry onion lightly, add zucchini, cook approx. 5 mins. Add chicken cubes and approx 1 1/2 cups water. Cook 15-30 mins, cool, puree and add cream. Add more water if necessary. No salt or pepper to be added.

 

Salads.

WALDORF SALAD

3 red and 3 green apples
4 stalks white celery, chopped
1/2 cup mayonnaise or creamy dressing
1/2 - 1 cup chopped walnuts or pecan nuts
2 tbsp lemon juice
2 tbsp cream
salt to taste

Core apples, but do not peel, then dice into bowl. Add  lemon juice and toss, then add celery. Mix cream with mayonnaise and place over salad and chill. Add walnuts, and also chopped dates if desired.

FRESH TOMATO & HERB DRESSING

4 cups tomatoes
1 tbsp fresh basil
1 tbsp tomato paste
1/2 capsicum (medium)
1 tbsp olive oil

Blend ingredients together. Use as a sauce for pasta by blending ingredients, then cooking over a medium heat for 10 mins. Ideal for salad dressing. Add a little water for the desired consistency. Can be refrigerated for 1 week

 

Savories.

HEALTHY MEAT PIES

1 heaped cup of diced potato
1 cup water
1 cup gravy
1 cup Vitaburger soaked in 2 cups hot water
1 medium onion cubed
salt to taste
pastry

Cook onion in water for 10 mins. then add potato. When both cooked add Vitaburger, gravy and salt. Boil gently for 10 mins. Cool, line 12 patty tins with pastry, fill with mixture, cover with pastry and bake in a hot oven.

STUFFED TOMATOES

1 16 oz tin soya beans, mashed
1 tbsp green pepper, finely chopped
favorite herb seasoning
6 firm tomatoes
1 cup cooked celery
fresh breadcrumbs
1 onion

Sauté onion and green pepper in oil. Remove pulp from tomatoes, and sprinkle inside with salt. Mix soya beans, celery, pepper, onion and seasoning with tomato pulp. Fill tomato with mixture, top with crumbs, and bake in a moderate oven 30 mins, or until tomatoes are soft.

 

 

Sweets & Desserts.

SESAME SWEETS

4 oz dried apricots, dates, raisins
2 oz crystallized ginger
1 cup sesame seeds
1 tbsp honey

Chop fruit and ginger finely. Toast sesame seeds lightly. Add 1/2 cup of mixture. Add honey and roll into balls. Toss in remaining sesame seeds and refrigerate until firm.

PENGUIN ICE-CREAM

3 large very ripe bananas
1/2 cup cold pressed oil
3 tbsp Soya Compound powder (or powdered milk)
1/2 cup water
1 tbsp carob powder
1 tbsp honey

Place everything in blender and blend thoroughly. Pour into fridge container. Cover with lid. It does not require a second beating. If defrosts refreeze again without beating.

 

Miscellaneous

DANDY CAROB CANDY

1/2 cup carob powder
1/2 cup nuts and sunflower seeds, mixed
1/2 cup sultanas and currents, mixed
2 tbsp soy milk powder, or ordinary milk powder
1 teas vanilla
1/3 cup honey
1/2 cup coconut cream

Thoroughly mix all ingredients together. Add coconut or milk powder to make stiffer if needed. Form into a roll, coat in coconut, wrap in wax paper, chill and slice.

DIP

1/2 pkt dry chick peas (garbanzo beans)
salt
sesame seeds
onion
lemon juice
parsley

Thoroughly cook chick peas. Drain and rinse them. Add all other ingredients and whiz. Can use as a dip or spread instead of butter.

HAPPY CHILDREN

1 grassy field
2 or 3 small dogs
some pebbles
1/2 doz children
1 pinch of brook
flowers
blue sky

Mix children and dogs together. Place in field, stirring constantly. Pour the brook over the pebbles. Sprinkle the field with flowers. Spread over the blue sky. Bake in the warm sun. Set to cool in a bathtub.
