CREAM OF POTATO SOUP 3 cups potatoes, cubed Simmer potatoes, onion salt in stock, Puree and place all ingredients in stock pot, except cream, simmer 5 mins. Add cream and serve. ZUCCHINI SOUP 1 large onion, chopped Fry onion lightly, add zucchini, cook approx. 5 mins. Add chicken cubes and approx 1 1/2 cups water. Cook 15-30 mins, cool, puree and add cream. Add more water if necessary. No salt or pepper to be added. |

WALDORF SALAD 3 red and 3 green apples Core apples, but do not peel, then dice into bowl. Add lemon juice and toss, then add celery. Mix cream with mayonnaise and place over salad and chill. Add walnuts, and also chopped dates if desired. FRESH TOMATO & HERB DRESSING 4 cups tomatoes Blend ingredients together. Use as a sauce for pasta by blending ingredients, then cooking over a medium heat for 10 mins. Ideal for salad dressing. Add a little water for the desired consistency. Can be refrigerated for 1 week |

HEALTHY MEAT PIES 1 heaped cup of diced potato Cook onion in water for 10 mins. then add potato. When both cooked add Vitaburger, gravy and salt. Boil gently for 10 mins. Cool, line 12 patty tins with pastry, fill with mixture, cover with pastry and bake in a hot oven. STUFFED TOMATOES 1 16 oz tin soya beans, mashed Sauté onion and green pepper in oil. Remove pulp from tomatoes, and sprinkle inside with salt. Mix soya beans, celery, pepper, onion and seasoning with tomato pulp. Fill tomato with mixture, top with crumbs, and bake in a moderate oven 30 mins, or until tomatoes are soft.

SESAME SWEETS 4 oz dried apricots, dates, raisins Chop fruit and ginger finely. Toast sesame seeds lightly. Add 1/2 cup of mixture. Add honey and roll into balls. Toss in remaining sesame seeds and refrigerate until firm. PENGUIN ICE-CREAM 3 large very ripe bananas Place everything in blender and blend thoroughly. Pour into fridge container. Cover with lid. It does not require a second beating. If defrosts refreeze again without beating. |

DANDY CAROB CANDY 1/2 cup carob powder Thoroughly mix all ingredients together. Add coconut or milk powder to make stiffer if needed. Form into a roll, coat in coconut, wrap in wax paper, chill and slice. DIP 1/2 pkt dry chick peas (garbanzo beans) Thoroughly cook chick peas. Drain and rinse them. Add all other ingredients and whiz. Can use as a dip or spread instead of butter. HAPPY CHILDREN 1 grassy field Mix children and dogs together. Place in field, stirring constantly. Pour the brook over the pebbles. Sprinkle the field with flowers. Spread over the blue sky. Bake in the warm sun. Set to cool in a bathtub. Return To |
